Prepare the Pancake Batter

Mix Dry Ingredients
In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, sugar, and a pinch of salt until well combined.

Combine Wet Ingredients
In another bowl, whisk together the buttermilk and egg until smooth. Melt the 2 tablespoons of unsalted butter and let it cool slightly before adding to the wet mixture.

Combine Wet and Dry Mixtures
Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Do not overmix; a few lumps are okay.
Cooking the Pancakes

Preheat the Pan
Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of butter.

Cook the Pancakes
Using a 1/4 cup measuring cup, pour the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip and Finish Cooking
Carefully flip the pancakes and cook for another 1-2 minutes until golden brown. Remove from heat and keep warm while you cook the remaining pancakes.
Serving the Pancakes

Serve
Stack the pancakes on a plate. Top with 2 tablespoons of butter and drizzle with 100% maple syrup to taste. Enjoy your Sam's Stack!
