Method

Crust Preparation

  1. 1

    Make the Dough

In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, diced unsalted butter and mix until the mixture resembles coarse crumbs.

  2. 2

    Add Water

Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overmix.

  3. 3

    Chill the Dough

Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.

  4. 4

    Roll Out the Dough

On a floured surface, roll out the dough into a circle about 12 inches in diameter. Transfer it to a 9-inch pie pan.

  5. 5

    Trim and Crimp Edges

Trim any excess dough hanging over the edges and crimp the edges of the crust to make it decorative.

Filling Preparation

  1. 6

    Mix the Filling Ingredients

In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, ground cinnamon, ground ginger, ground nutmeg, and salt. Mix well until fully combined.

  2. 7

    Add Eggs and Milk

Add the eggs one at a time, mixing well after each addition, and then pour in the evaporated milk. Mix until smooth and well combined.

  3. 8

    Pour into Crust

Pour the pumpkin filling into the prepared pie crust, spreading it evenly.

  4. 9

    Bake the Pie

Preheat your oven to 425°F (220°C). Bake the pie for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for an additional 40-50 minutes, or until a knife inserted in the center comes out clean.

  5. 10

    Cool and Serve

Once baked, remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours before serving. Serve with whipped cream if desired.
