    Cook the Sweet Potato

    Peel and dice the sweet potato into small cubes. Boil or steam the cubes in water for about 10-15 minutes until tender. Drain and set aside.

    Cook the Quinoa

    Rinse 1/2 cup of dry quinoa under cold water. In a saucepan, combine the rinsed quinoa with 1 cup of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes. Remove from heat and fluff with a fork.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté for 3-4 minutes until they are lightly browned. Then add the cooked sweet potato and fresh spinach, stirring until the spinach is wilted.

    Add Egg Whites and Seasonings

    Pour the egg whites into the skillet with the vegetables. Sprinkle with salt, black pepper, garlic powder, and paprika. Stir gently to combine all ingredients.

    Cook the Scramble

    Continue to cook the egg whites over medium heat for 3-5 minutes, stirring occasionally until they are fully cooked and no longer runny.

    Incorporate Protein

    If using pre-cooked protein (such as chicken or turkey), add it to the skillet during the last couple of minutes of cooking just to heat through. If using tofu, crumble it into the mixture before adding the egg whites.

Serving

    Once the scramble is cooked, serve immediately on a plate. Optionally, garnish with fresh herbs or avocado slices for added flavor.
