Once collected, filter the sap through a fine mesh strainer or cheesecloth to remove any debris, leaves, or bark.

In a large pot, bring the filtered sap to a rolling boil over medium-high heat. Stir occasionally to prevent it from sticking to the pot.

Once the sap reaches a boil, reduce the heat to maintain a gentle simmer. Continue cooking, stirring occasionally.

Use a candy thermometer to monitor the temperature. The sap is ready when it reaches 104°C (219°F).

When the sap is nearing syrup consistency, add 1 tsp of vanilla extract, 1 tsp of cinnamon, and a pinch of salt for enhanced flavor.
