    Heat the vegetable oil in a skillet over medium heat. Once hot, fry each corn tortilla for about 1-2 minutes on each side until crispy and golden brown. Remove and drain on paper towels.

Black Bean Mix

    Prepare the Black Bean Mix

    In a medium skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent. Stir in the black beans, cumin, salt, and pepper. Cook for about 5-7 minutes until heated through. Mash slightly with a fork for a thicker consistency.

Salsa

    Make the Salsa

    In a bowl, combine diced tomatoes, red onion, minced jalapeño, chopped cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.

Eggs

    Cook the Eggs

    In a non-stick skillet, cook the eggs to your liking (fried, scrambled, or poached). Season with salt and pepper to taste.

Assembly

    Assemble the Huevos Rancheros

    On each tortilla, layer a spoonful of the black bean mix, followed by the cooked eggs. Top with salsa, crumbled queso fresco, and extra cilantro. Serve with sliced avocado on the side.
