    Prepare the Ingredients

    Dice the ham, bell peppers, and onion into small pieces. Shred the Colby Jack cheese and set all ingredients aside.

    Beat the Eggs

    In a mixing bowl, crack the eggs and whisk them together. Add salt and black pepper to taste. Mix until fully combined.

    Cook the Vegetables

    In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and bell peppers to the skillet. Sauté for about 3-4 minutes until the vegetables are softened.

    Add Ham

    Add the diced ham to the skillet with the vegetables. Continue to cook for another 2 minutes until the ham is heated through.

    Cook the Eggs

    Pour the beaten eggs over the ham and vegetable mixture in the skillet. Cook for 3-4 minutes, gently stirring to scramble the eggs or allowing it to set if making an omelet.

    Add Cheese

    Once the eggs are almost cooked through, sprinkle the shredded Colby Jack cheese on top. Cover the skillet and let it cook for another 1-2 minutes until the cheese melts.

    Once the cheese is melted and the eggs are fully cooked, remove from heat and serve immediately.

    Prepare the Potatoes

    Wash and cube the potatoes into small pieces for even cooking.

    In a bowl, toss the cubed potatoes with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.

    Cook the Potatoes

    In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned potatoes and cook for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy.

    Once the potatoes are cooked to your liking, remove from heat and serve alongside the Denver omelet.
