Preparation

  1. 1

    Prepare the Ingredients

Chop the onion, garlic, bell pepper, and tomatoes. Remove the seeds from the green chilies and chop them as well.

Cooking

  1. 2

    Brown the Meats

In a large pot or Dutch oven over medium-high heat, brown the ground beef and chorizo sausage until fully cooked. Drain excess fat.

  2. 3

    Sauté the Vegetables

Add the chopped onion, garlic, and bell pepper to the pot. Sauté until the vegetables are soft, about 5-7 minutes.

  3. 4

    Add Tomatoes and Chilies

Stir in the chopped tomatoes and green chilies, mixing well.

  4. 5

    Combine Canned Goods

Add the canned kidney beans, black beans, and diced tomatoes to the pot. Mix everything together.

  5. 6

    Season the Chili

Sprinkle in the chili powder, cumin, salt, black pepper, and paprika. Stir well to combine all the spices.

  6. 7

    Add Beef Broth

Pour in the beef broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let simmer for 30-40 minutes.

Serving

  1. 8

    Serve the Chili

Ladle the chili into bowls and garnish with sour cream, chopped cilantro, and a lime wedge on the side.
