Method

Biscuits

  1. 1

    Prepare the Dough

In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Mix well.

  2. 2

    Cut in Butter

Add the unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

  3. 3

    Add Cheese and Milk

Stir in the shredded cheddar cheese. Gradually pour in the milk, mixing until just combined. Do not overmix.

  4. 4

    Shape and Bake

Preheat the oven to 425°F (220°C). Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter or glass. Place on a baking sheet and bake for 15-20 minutes, or until golden brown.

Gravy

  1. 5

    Cook Sausage

In a large skillet over medium heat, add the breakfast sausage. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

  2. 6

    Sauté Vegetables

Add the diced onion and sliced mushrooms to the skillet. Cook until the onion is translucent and the mushrooms have released their moisture, about 5 minutes.

  3. 7

    Make Roux

Sprinkle the all-purpose flour over the sausage and vegetables. Stir well to combine and cook for 1-2 minutes until the flour is slightly golden.

  4. 8

    Add Milk

Gradually whisk in the milk, ensuring there are no lumps. Continue to cook until the gravy thickens, about 5-7 minutes. Season with black pepper and salt to taste.

Eggs

  1. 9

    Cook the Eggs

Heat butter or oil in a non-stick skillet over medium heat. Crack the eggs into the skillet and cook them to your desired doneness (sunny-side up, scrambled, etc.), about 3-5 minutes.
