Cook the Vegetables
In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Add the diced bell pepper, onion, and spinach. Sauté for about 3-4 minutes until the vegetables are soft.

Serve
Slide the omelet or scramble onto a plate and keep warm while you prepare the potatoes.

Prepare the Potatoes
In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.

Cook the Potatoes
In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.

Finish and Serve
Once cooked, remove the potatoes from heat and serve alongside the omelet or scramble.

Prepare Optional Salad or Fruit Bowl
For the mixed greens salad, combine your choice of greens, cherry tomatoes, and cucumbers in a bowl. For the fruit bowl, mix together seasonal fruits such as berries, melon, and bananas.
