Preparation of Main Dish

    Prepare the English Muffins

    Split the English muffins in half and toast them until golden brown. Set aside.

    Sauté Spinach

    In a skillet over medium heat, add a small amount of olive oil. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat.

    Cook the Ham

    In the same skillet, add the ham slices and cook for 1-2 minutes on each side until heated through. Remove from heat.

    Prepare Hollandaise Sauce

    If using pre-made hollandaise sauce, heat it gently in a small saucepan. If making from scratch, whisk together egg yolks, lemon juice, and melted butter over low heat until thickened.

    Assemble the Dish

    On each toasted English muffin half, layer sautéed spinach, a slice of ham, and a generous spoonful of hollandaise sauce. If desired, slice the avocado and place on top.

    In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber.

    Drizzle olive oil and balsamic vinegar over the salad. Season with salt and pepper to taste. Toss gently to combine.
