Prepare the Vanilla Base
In a saucepan, whisk together coconut cream, scraped vanilla bean seeds, and maple syrup over medium heat until combined and warm.

Add Agar-Agar
Sprinkle agar-agar powder over the mixture, and whisk continuously for about 2-3 minutes until fully dissolved.

Set the Mixture
Remove from heat and pour the mixture into ramekins. Let cool for about 30 minutes at room temperature, then refrigerate for at least 2 hours until set.

Prepare Berries
While the mixture is setting, wash and prepare your fresh berries. Set aside.

Caramelize Sugar
Once the crème brûlée has set, sprinkle sugar evenly on top of each ramekin. Using a kitchen torch, caramelize the sugar until it forms a crispy layer on top.

Serve
Let the caramelized sugar cool for a minute, then serve with fresh berries on the side.
