    Cook the Spaghetti

    In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain and set aside.

    Sauté Pancetta and Onions

    In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until it starts to crisp, about 4-5 minutes. Add the chopped onion and cook until softened, about 3-4 minutes.

    Deglaze with White Wine

    Pour in the white wine and simmer for about 2-3 minutes until the alcohol has evaporated and the mixture has thickened slightly.

    Add Tomatoes and Season

    Stir in the San Marzano tomatoes, breaking them up with a spoon. Add the red pepper flakes, salt, and black pepper to taste. Let the sauce simmer for about 15 minutes, stirring occasionally.

    Combine with Spaghetti

    Add the cooked spaghetti to the sauce and toss to combine. Cook for an additional 2-3 minutes until heated through.

    Serve the spaghetti hot, topped with grated Parmesan cheese.
