    Prepare the Pignoli Crust

    In a dry skillet over medium heat, toast the pignoli (pine nuts) until golden brown, about 3-5 minutes. Remove from heat and let cool.

    Combine Crust Ingredients

    In a bowl, mix the toasted pignoli, breadcrumbs, chopped parsley, 1 tablespoon of olive oil, salt, and black pepper. Set aside.

    Prepare the Salmon

    Season the salmon fillets with salt and black pepper on both sides.

    Pan-Roast the Salmon

    In a large skillet over medium-high heat, add the remaining olive oil. Once hot, add the salmon fillets skin-side down and cook for 4-5 minutes until skin is crispy.

    Add the Crust

    Carefully flip the salmon fillets and press the pignoli crust onto the top of each fillet. Cook for another 3-4 minutes, until the fish is cooked through.

    Make the Lemon White Wine Sauce

    In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the white wine and lemon juice, scraping any bits from the bottom. Let simmer for 3-5 minutes until slightly reduced.

    Serve

    Plate the salmon fillets, drizzle with the lemon white wine sauce, and garnish with additional parsley if desired.
