    Prepare the Sauce

    In a saucepan over medium heat, combine champagne, Dijon mustard, honey, minced garlic, salt, and black pepper. Stir well and bring to a simmer. Allow to cook for about 5 minutes until slightly thickened.

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Salmon

    Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle olive oil over the fillets and season with salt and pepper.

    Roast the Salmon

    Pour the prepared champagne-mustard sauce over the salmon fillets. Roast in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Garnish and Serve

    Remove the salmon from the oven and drizzle any remaining sauce from the baking sheet over the top. Garnish with chopped fresh parsley before serving.
