    Prepare the Ingredients

    Peel and dice the potatoes, slice the long hot peppers, and chop the mushrooms. Mince the garlic.

    Sear the Pork Chops

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the pork chops with salt and black pepper. Sear the chops for about 4-5 minutes on each side until they are golden brown. Remove them from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining olive oil. Add the minced garlic, long hot peppers, and diced potatoes. Cook for about 5 minutes until the potatoes start to soften.

    Add Mushrooms and Wine

    Add the chopped mushrooms to the skillet and cook for another 5 minutes. Pour in the white wine and add the fresh thyme. Stir to combine everything.

    Cook the Pork Chops

    Return the seared pork chops to the skillet, nestling them among the vegetables. Cover and simmer for about 10-15 minutes, or until the pork is cooked through and the potatoes are tender.
