    Prepare the Filet Mignon

    Season the filet mignon with salt and black pepper on both sides.

    Sear the Steak

    In a large skillet, heat the olive oil over medium-high heat. Add the filet mignon and sear for about 4-5 minutes on each side for medium-rare. Remove from skillet and set aside to rest.

    Sauté the Vegetables

    In the same skillet, add the sliced mushrooms, onion, and cherry peppers. Sauté for about 5-7 minutes until the vegetables are soft.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Make the Sauce

    Pour in the sherry wine, scraping the bottom of the skillet to deglaze. Bring to a simmer and let cook for about 3-4 minutes until slightly thickened.

    Combine and Serve

    Return the filet mignon to the skillet, spooning the sauce and vegetables over the top. Cook for an additional minute to warm through. Garnish with chopped parsley before serving.
