    Searing the Meat

    In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef short ribs with salt and black pepper. Sear the short ribs in the hot oil until browned on all sides, about 8-10 minutes. Remove the short ribs and set aside.

    Sautéing Vegetables

    In the same pot, add the chopped onion, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Deglazing the Pot

    Pour in the red wine, scraping the bottom of the pot to deglaze and incorporate any browned bits. Allow the wine to simmer for about 5 minutes.

    Adding Broth and Herbs

    Add the beef broth, fresh thyme, and bay leaves to the pot. Return the short ribs to the pot, ensuring they are submerged in the liquid.

    Braising

    Bring the mixture to a gentle simmer, then cover the pot and transfer it to a preheated oven at 160°C (325°F). Braise for 2.5 to 3 hours or until the beef is tender and falls off the bone.

    Serving

    Once cooked, remove the pot from the oven. Carefully take out the short ribs and let them rest. Strain the liquid to create a sauce, reducing it on the stovetop if needed. Serve the ribs with the sauce drizzled on top.
