Preparation Steps

  1. 1

    Prepare the Strawberries

Wash and slice the fresh strawberries. Place them in a bowl and sprinkle with 1/4 cup of granulated sugar. Let them sit for about 30 minutes to macerate.

  2. 2

    Make the Shortcake

Preheat the oven to 425°F (220°C). In a large bowl, combine the flour, baking powder, salt, and remaining 3/4 cup of sugar. Cut in the butter until the mixture resembles coarse crumbs.

  3. 3

    Combine Ingredients

Stir in the milk until just combined. Turn the dough onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick round. Cut into rounds using a biscuit cutter.

  4. 4

    Bake the Shortcakes

Place the rounds on a baking sheet and bake for 12-15 minutes or until golden brown. Let them cool on a wire rack.

  5. 5

    Prepare the Topping

In a mixing bowl, combine the mascarpone cheese, heavy cream, and vanilla extract. Whip until soft peaks form.

  6. 6

    Assemble the Shortcake

To serve, slice the shortcakes in half, layer with macerated strawberries and mascarpone topping, and place the top half back on. Top with additional strawberries and cream if desired.
