Prepare the Beef
In a large skillet, heat olive oil over medium-high heat. Season the beef chuck roast with salt, black pepper, and Italian seasoning. Sear the roast on all sides until browned, about 3-4 minutes per side.

Cook the Beef
Transfer the seared beef to a slow cooker. Add minced garlic, sliced onion, bell peppers, beef broth, and red pepper flakes. Cover and cook on low for 8 hours or until the beef is tender and can be shredded easily.

Shred the Beef
Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker to soak up the juices.

Assemble the Sandwich
Split the hoagie rolls and fill them generously with the shredded beef mixture. Top with shredded mozzarella cheese.
