Vegetable Tofu Curry

    Prepare the Tofu

    Press the tofu to remove excess moisture. Cut the tofu into bite-sized cubes.

    Sauté the Vegetables

    In a large pan, heat vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add minced garlic and grated ginger, and cook for another minute until fragrant.

    Add More Vegetables

    Add the diced bell pepper, sliced carrot, and diced zucchini to the pan. Sauté for about 5-7 minutes until the vegetables are tender.

    Cook the Tofu

    Add the cubed tofu to the pan, stirring gently to combine with the vegetables. Cook for about 5 minutes until the tofu is slightly golden.

    Add the Sauce

    Pour in the coconut milk, curry powder, soy sauce, salt, and pepper. Stir well to combine all ingredients. Bring the mixture to a gentle simmer.

    Simmer

    Cover and let the curry simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning if necessary.

    Garnish and Serve

    Once the curry is ready, remove from heat. Garnish with fresh cilantro and serve hot over coconut brown rice.

    Rinse the Rice

    Rinse the brown rice under cold water until the water runs clear to remove excess starch.

    Combine Ingredients

    In a medium saucepan, combine rinsed brown rice, coconut milk, water, and salt.

    Cook the Rice

    Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let simmer for about 35-40 minutes, or until the rice is tender and the liquid is absorbed.

    Fluff and Serve

    Remove from heat and let the rice sit covered for 5 minutes. Fluff with a fork before serving.
