Preparation

    Chop Vegetables

    Finely chop the onion, garlic cloves, and bell pepper. Set aside for later use.

    Prepare Optional Garnishes

    If using, slice the avocado and chop the cilantro. Set aside for garnishing.

Cooking

    Cook the Beef

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

    Add Vegetables

    Add the chopped onion, garlic, and bell pepper to the pot. Sauté for another 5 minutes until the vegetables are soft.

    Combine Remaining Ingredients

    Stir in the canned diced tomatoes (with juice), red kidney beans (drained and rinsed), chili powder, ground cumin, salt, and black pepper. Mix well to combine.

    Bring the mixture to a simmer. Reduce the heat to low and let it cook for about 30 minutes, stirring occasionally.

Serving

    Ladle the chili into bowls and top with shredded cheddar cheese, sour cream, and chopped green onions. Add sliced avocado and cilantro if using.
