Preparing the Base

    Rinse Quinoa

    Rinse the quinoa under cold water in a fine mesh strainer to remove its bitterness.

    Cook Quinoa

    In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat.

    Fluff Quinoa

    Once boiling, reduce the heat to low, cover, and let simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Preparing the Vegetables

    Chop Vegetables

    Chop the bell pepper, zucchini, and red onion into bite-sized pieces.

    Sauté Vegetables

    Heat a tablespoon of olive oil in a large skillet over medium heat. Add the chopped vegetables (bell pepper, zucchini, and red onion) and sauté for about 5-7 minutes until they are tender.

    Add the cherry tomatoes and spinach to the skillet and cook for an additional 2-3 minutes until the spinach wilts.
