Soak the Rice Noodles
Place the rice noodles in a large bowl and cover with hot water. Let them soak for about 10-15 minutes, or until they are tender. Drain and set aside.

Prepare the Protein
If using tofu, press it to remove excess moisture, then cut it into bite-sized cubes. If using tempeh, slice it thinly.

Chop the Vegetables
Slice the bell pepper, julienne the carrot, and prepare the broccoli florets and snow peas. Slice the green onions and set aside.
Cooking

Cook the Protein
In a large skillet or wok, heat a tablespoon of sesame oil over medium-high heat. Add the soy protein (tofu or tempeh) and cook until golden brown, about 5-7 minutes. Remove from the skillet and set aside.

Combine Everything
Add the drained rice noodles, cooked soy protein, and all the sauce ingredients (soy sauce, oyster sauce, Sriracha, and brown sugar) to the skillet. Toss everything together and cook for another 2-3 minutes until heated through.
Serving

Garnish and Serve
Serve the drunken noodle hot, garnished with fresh cilantro and lime wedges on the side.
