Preparation

Prepare Jasmine Rice
Rinse the jasmine rice under cold water until the water runs clear. Combine 1 cup of rice with 1.5 cups of water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let sit covered for 5 minutes before fluffing with a fork.

Prepare Seafood
Season the grouper fillets and shrimp with salt and black pepper. Set aside.

Prepare Veggies
Dice the pineapple and tomato, and slice the bell pepper. Set aside.

Prepare Sauce
In a small bowl, whisk together the Thai chili sauce, soy sauce, and lime juice. Set aside.

Prepare Breading
In a shallow dish, combine flour and cornstarch. In another shallow dish, place the beaten egg. Dip the seasoned grouper and shrimp first into the egg, then coat with the flour-cornstarch mixture.

Fry Seafood
In a large skillet, heat oil over medium-high heat. Once hot, carefully add the breaded grouper fillets and shrimp. Fry until golden brown, about 3-4 minutes per side for the fish and 2-3 minutes for the shrimp. Remove and drain on paper towels.
Combining Ingredients

Stir-fry Vegetables
In the same skillet, add a little more oil if needed, and sauté the bell pepper, diced pineapple, and tomato for about 3-4 minutes until just tender.

Add Sauce and Basil
Pour the prepared sauce over the sautéed vegetables, stir well, and let it cook for 2 minutes. Add the Thai basil leaves and stir until wilted.

Combine and Serve
Add the fried grouper and shrimp back into the skillet, toss gently to combine everything. Serve hot over the jasmine rice and sprinkle toasted cashews on top.
