    Prepare the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Gradually add the boiling water while stirring with a fork until the mixture comes together. Once cool enough to handle, knead the dough on a floured surface until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Make the Filling

    In a large bowl, combine the ground chicken, ground pork, green onions, grated ginger, minced garlic, soy sauce, sesame oil, salt, and pepper. Mix thoroughly until all ingredients are well combined. Cover and refrigerate the filling while the dough rests.

    Assemble the Dumplings

    After the dough has rested, divide it into small balls (about 1 inch in diameter). Roll out each ball on a floured surface into a thin circle (about 3 inches in diameter). Place a teaspoon of filling in the center of each circle. Fold the dough over the filling, pinching the edges to seal tightly. Repeat until all dough and filling are used.

Steaming

    Prepare a steamer basket lined with parchment paper. Place the dumplings in the steamer, making sure they are not touching. Steam over boiling water for about 15-20 minutes, or until the filling is cooked through and the dough is translucent.
