Preparation of Seafood Filling

Cook the Shrimp
In a pot of boiling water, add the shrimp and cook for about 2-3 minutes, or until they turn pink and opaque. Drain and cool before chopping into small pieces.

Prepare the Filling
In a mixing bowl, combine the chopped shrimp, crab meat, cilantro, green onion, carrot, and cooked rice vermicelli noodles. Mix well until all ingredients are evenly incorporated.
Rolling the Spring Rolls

Soften Rice Paper Wrappers
Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens. Remove from the water and lay it flat on a clean surface.

Fill and Roll
Place a small amount of the seafood filling (about 2 tablespoons) at the bottom of the wrapper. Fold the sides over the filling and then roll it tightly from the bottom up to form a spring roll. Repeat with remaining wrappers and filling.
Making Hoisin Dipping Sauce

Combine Ingredients
In a small bowl, whisk together the hoisin sauce, peanut butter, water, rice vinegar, and minced garlic until smooth. If desired, add chili sauce to taste for a spicy kick.
Serving

Serve
Arrange the seafood spring rolls on a platter and serve with the hoisin dipping sauce on the side.
