Preparation of Noodles

Soak the Rice Noodles
Place the rice noodles in a large bowl and cover them with hot water. Let them soak for about 30 minutes, or until they are soft but not mushy. Drain and set aside.
Cooking the Protein

Cook the Shrimp
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook until they turn pink and opaque, about 2-3 minutes. Remove the shrimp from the skillet and set aside.

Cook the Tofu
Add another tablespoon of vegetable oil to the skillet. Once hot, add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside with the shrimp.
Stir-Frying

Stir-Fry the Vegetables
In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sliced green onions. Stir-fry for about 1 minute until fragrant. Push the garlic and onions to the side.

Combine Ingredients
Add the softened rice noodles, cooked shrimp, and tofu back into the skillet. Pour the fish sauce, tamarind paste, sugar, and lime juice over the mixture. Toss everything together until well combined and heated through, about 3-4 minutes.

Add the Bean Sprouts
Add the bean sprouts and stir-fry for an additional minute, allowing them to soften slightly.
Garnishing and Serving

Garnish the Pad Thai
Transfer the Pad Thai to serving plates. Top with chopped peanuts, fresh cilantro, and lime wedges on the side.
