Method
Prepare Sticky Rice
- 1
Soak the Rice
Rinse the sticky rice under cold water until the water runs clear. Soak the rinsed rice in water for at least 4 hours or overnight.
- 2
Cook the Rice
Drain the soaked rice and place it in a steamer lined with cheesecloth. Steam the rice over boiling water for about 20-25 minutes, or until the rice is tender and sticky.
Prepare Coconut Sauce
- 3
Make Coconut Sauce
In a saucepan over low heat, combine the coconut milk, sugar, and salt. Stir until the sugar dissolves completely. Do not let it boil.
- 4
Combine Rice and Coconut Sauce
Once the rice is cooked, transfer it to a mixing bowl. Pour about 3/4 of the coconut sauce over the warm sticky rice and mix well. Let it sit for 15-20 minutes to absorb the flavors.
Prepare Mango
- 5
Slice the Mango
While the rice is resting, peel and slice the ripe mangoes into thin strips.
Serve
- 6
Assemble the Dish
To serve, place a portion of the sticky rice on a plate, top with mango slices, and drizzle with the remaining coconut sauce. Optionally, sprinkle with sesame seeds or mung beans for garnish.
