Method
Prepare the Filling

Mix the Filling
In a medium bowl, combine the lobster meat, crawfish tails, cream cheese, caviar, chopped chives, garlic powder, salt, and black pepper. Mix well until all ingredients are fully incorporated.
Assemble the Wontons

Fill Wonton Wrappers
Lay out a wonton wrapper on a clean surface. Place about a tablespoon of the filling mixture in the center of each wrapper. Moisten the edges of the wrapper with water, fold it over to create a triangle, and press the edges to seal. You can also fold the corners towards the center to create a different shape.

Continue this process until all the filling is used, placing the filled wontons on a baking sheet lined with parchment paper.
Prepare the Mango Glaze

Mix the Glaze
In a small saucepan over medium heat, combine the mango puree, honey, and lime juice. Stir until the mixture is well combined and warmed through. Set aside.
Prepare the Truffle Balsamic Drizzle

Combine Ingredients
In a separate small saucepan, combine the balsamic vinegar and truffle oil. Heat over medium heat until the mixture is slightly reduced and thickened, about 5-7 minutes. Remove from heat and set aside.
Cook the Wontons

Fry or Bake
You can either deep fry or bake the wontons. To fry, heat oil in a deep skillet to 350°F (175°C) and fry the wontons in batches until golden brown, about 3-4 minutes. To bake, preheat the oven to 400°F (200°C) and place the wontons on a baking sheet, brushing them lightly with oil. Bake for 15-20 minutes until golden and crispy.
Serve

Plate and Drizzle
Serve the wontons warm, drizzled with the mango glaze and truffle balsamic drizzle. Garnish with additional caviar and chives if desired.
