Method
For the Korean BBQ Ribs
- 1
Prepare the Marinade
In a medium bowl, mix together soy sauce, brown sugar, honey, sesame oil, minced garlic, grated ginger, gochujang, and rice vinegar until well combined.
- 2
Marinate the Ribs
Place the pork ribs in a large resealable bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
- 3
Preheat the Oven
Preheat your oven to 300°F (150°C).
- 4
Bake the Ribs
Remove the ribs from the marinade and place them on a baking sheet lined with aluminum foil. Bake for about 2.5 to 3 hours, basting with the reserved marinade every 30 minutes.
- 5
Finish on the Grill
Once the ribs are tender, preheat a grill to medium-high heat. Grill the ribs for about 5-10 minutes on each side, until they develop a nice char. Sprinkle with sesame seeds and chopped green onions before serving.
For the Mac & Cheese
- 6
Cook the Pasta
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
- 7
- 8
Add Cheese and Seasonings
Remove from heat and stir in shredded cheddar cheese until melted. Season with salt and black pepper.
- 9
Combine with Pasta
Add the cooked macaroni to the cheese sauce, stirring until well coated. Transfer to a serving dish and keep warm.
For the Sweet Miso Collard Greens
- 10
Sauté the Garlic
In a large skillet, heat sesame oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- 11
- 12
Incorporate Miso and Honey
In a small bowl, mix together miso paste, honey, and water to create a smooth sauce. Pour this sauce over the collard greens and stir well to coat.
- 13
Cook Until Tender
Cover the skillet and cook for about 10-15 minutes, stirring occasionally, until the greens are tender.
