Frog Legs Preparation

Season the Frog Legs
Rinse the frog legs under cold water and pat them dry with paper towels. In a bowl, season the frog legs with salt and black pepper. Set aside to marinate for about 15 minutes.

Mix the Corn Batter
In a large bowl, combine cornmeal, all-purpose flour, baking powder, salt, and cayenne pepper. In another bowl, whisk together the egg and milk. Pour the wet ingredients into the dry ingredients and mix until just combined. The batter should be thick.
Sweet Chili Dipping Sauce Preparation

Prepare the Dipping Sauce
In a small bowl, mix together the sweet chili sauce, lime juice, and chopped cilantro. Set aside.
Roti Preparation

Make the Roti Dough
In a mixing bowl, combine the all-purpose flour and salt. Gradually add water and oil, mixing until a soft dough forms. Knead the dough for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 20 minutes.

Roll and Cook the Roti
Divide the dough into small balls. Roll each ball into a thin circle about 8 inches in diameter. Heat a skillet over medium heat and cook each roti for about 1-2 minutes on each side until golden brown and cooked through.
Frying the Frog Legs

Fry the Frog Legs
In a deep frying pan or pot, heat oil over medium-high heat. Dip each frog leg into the corn batter, allowing excess batter to drip off. Carefully place the battered frog legs into the hot oil and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
