Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour and salt. Mix well to ensure even distribution.

  2. 2

    Add Butter

Cut the unsalted butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.

  3. 3

    Combine Wet Ingredients

In a separate bowl, whisk together the egg yolk and cold water. Gradually add this mixture to the flour mixture, stirring until the dough begins to come together.

  4. 4

    Knead and Chill Dough

Turn the dough onto a floured surface and knead gently until smooth. Shape it into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

  1. 5

    Cook Beef Mixture

In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent.

  2. 6

    Add Ground Beef

Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through.

  3. 7

    Add Vegetables and Seasonings

Stir in the chopped bell pepper, olives, hard-boiled eggs, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.

  4. 8

    Cool Filling

Remove the skillet from heat and allow the filling to cool slightly while you prepare the dough.

Assembling and Baking

  1. 9

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 10

    Roll Out Dough

On a floured surface, roll out the chilled dough to about 1/8 inch thick. Use a round cutter or a bowl to cut out circles (about 6 inches in diameter).

  3. 11

    Fill Empanadas

Place a spoonful of the filling in the center of each dough circle. Fold the dough over to form a half-moon shape and press the edges together to seal. Use a fork to crimp the edges for extra security.

  4. 12

    Prepare for Baking

Brush the tops of the empanadas with the beaten egg and sprinkle with sesame seeds.

  5. 13

    Bake

Place the empanadas on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until golden brown.

  6. 14

    Cool and Serve

Remove from oven and let cool slightly before serving. Enjoy your homemade empanadas!
