Drunken Noodle Shrimp & Lobster Recipe

Preparation

    Prepare the Noodles

    Cook the rice noodles according to package instructions. Drain and rinse with cold water. Set aside.

    Prepare the Gailan

    Trim the ends of the gailan and cut into 2-inch pieces. Blanch in boiling water for 2-3 minutes until tender, then drain and set aside.

    Prepare the Protein

    Season the shrimp and scallops with salt and pepper. Grill the lobster tails until cooked through, about 5-7 minutes on each side.

Cooking

    Cook the Egg

    In a large pan or wok, scramble the eggs over medium heat until fully cooked. Remove and set aside.

    Combine Ingredients

    In the same pan, add the cooked rice noodles, gailan, grilled shrimp, scallops, and scrambled eggs. Stir to combine.

    Add Sauce

    Pour in the Thai sweet chili sauce and gluten-free soy sauce. Toss everything together over medium heat until heated through.

Serving

    Plate the Dish

    Spoon the drunken noodle mixture onto plates. Top with grilled lobster tail and garnish with green onions and lime wedges.
