Preparation

Soak Rice Noodles
Begin by soaking the rice noodles in warm water for about 30 minutes until they are soft and pliable. Drain and set aside.

Prep the Beef
Slice the beef sirloin into thin strips against the grain. This will help to keep the meat tender.

Prepare the Gailan
Rinse the gailan under cold water and chop into 2-inch pieces. Set aside.
Cooking

Cook the Beef
In a large wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced beef and stir-fry for about 3-4 minutes until browned. Remove from the wok and set aside.

Scramble the Eggs
In the same wok, add another tablespoon of vegetable oil. Crack the eggs into the wok and scramble them until fully cooked. Remove and set aside with the beef.

Stir-fry the Vegetables
Add the remaining tablespoon of vegetable oil to the wok. Add the chopped gailan and stir-fry for 2-3 minutes until slightly wilted.

Combine Ingredients
Add the soaked rice noodles to the wok along with the cooked beef and scrambled eggs. Pour in the sweet soy sauce, soy sauce, oyster sauce, minced garlic, and chili paste. Toss everything together for about 3-4 minutes until heated through and well combined.
