    Clean the Clams

    Rinse the fresh clams under cold running water to remove any sand or grit. Discard any clams that are open and do not close when tapped.

    Cook the Clams

    In a medium-sized pot, add the minced garlic and grated ginger. Sauté over medium heat until fragrant, about 2 minutes.

    Add Ingredients

    Stir in the chili paste, coconut milk, salt, and black pepper. Bring to a gentle simmer.

    Combine and Steam

    Add the cleaned clams to the pot. Cover and steam for about 5-7 minutes or until the clams open up. Discard any clams that do not open.

    Finish the Sauce

    Remove from heat and stir in the lime juice and chopped cilantro. Set aside to serve with the roti.

    Prepare the Dough

    In a large bowl, combine the all-purpose flour, salt, and water. Mix until a dough forms. Knead for about 5-7 minutes until smooth.

    Divide the rested dough into equal portions. Roll each portion into a ball and then flatten it into a round shape using a rolling pin.
