Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust them with flour, shaking off any excess flour.

Making the Cake Batter

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsalted butter and semisweet chocolate. Microwave in 30-second intervals, stirring after each interval until melted and smooth.

  2. 4

    Combine Sugar and Eggs

In a mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly thickened.

  3. 5

    Mix in Chocolate

Pour the melted chocolate mixture into the egg mixture and stir until fully incorporated.

  4. 6

    Add Vanilla and Flour

Stir in the vanilla extract and the tablespoon of all-purpose flour until just combined. Be careful not to overmix.

Baking

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  3. 9

    Cool Before Serving

Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate to release the cakes.

Serving

  1. 10

    Add Ice Cream

Serve the warm lava cakes immediately with a scoop of vanilla ice cream on top.
