Chicken Marinade

Prepare the Chicken
Cut the chicken breast into thin strips, approximately 1 inch wide.

Marinate the Chicken
In a large bowl, combine soy sauce, lime juice, brown sugar, minced garlic, grated ginger, coconut milk, and salt. Add the chicken strips to the marinade, making sure they are fully coated. Cover and refrigerate for at least 1 hour or preferably overnight.

Mix Peanut Sauce Ingredients
In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, honey, minced garlic, and water until smooth and well combined.

Adjust Consistency
If the sauce is too thick, add more water, one tablespoon at a time, until desired consistency is reached. Add red pepper flakes and salt to taste. Set aside.
Grilling the Chicken

Prepare Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. If using metal skewers, ensure they are clean.

Assemble the Skewers
Remove the chicken from the marinade and thread the strips onto the skewers, about 4-5 pieces per skewer.

Preheat the Grill
Preheat a grill to medium-high heat.

Serve the Chicken Satay
Remove the skewers from the grill, and serve hot with the prepared peanut sauce on the side for dipping.
