Steak Preparation

Season the Steak
Pat the ribeye steaks dry with paper towels. Rub both sides with olive oil, then season generously with salt and black pepper.

Sear the Steak
Heat a cast-iron skillet over high heat. Once hot, add the steaks and sear for 4-5 minutes on each side for medium-rare, adjusting time based on thickness and desired doneness.

Add Aromatics
During the last minute of cooking, add crushed garlic cloves and fresh thyme to the skillet. Baste the steaks with the oil and juices from the pan to enhance flavor.

Rest the Steak
Remove the steaks from the skillet and let them rest on a cutting board for about 5 minutes before slicing.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips to form fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large, heavy pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes
Drain and dry the soaked potatoes. Fry them in batches for about 4-5 minutes until golden and crispy. Use a slotted spoon to remove them and drain on paper towels.

While the fries are still hot, sprinkle with salt to taste.
