Preparing the Ham

Preheat your oven to 325°F (165°C). Place the whole ham on a rack in a large roasting pan, cut side down.

Scoring the Ham

Using a sharp knife, score the surface of the ham in a diamond pattern. Make shallow cuts about 1 inch apart.

Making the Glaze

Combining the Ingredients

In a medium saucepan over medium heat, combine the brown sugar, honey, Dijon mustard, and cloves. Stir until the sugar is dissolved and the mixture is well combined.

Optional Glaze Variation

For a fruity glaze, add pineapple juice, ground cinnamon, and ground nutmeg to the saucepan. Stir well and bring to a simmer for about 5 minutes.

Applying the Glaze

Brush the glaze generously over the scored surface of the ham, making sure to get it into the cuts.

Roasting

Cover the ham loosely with aluminum foil and place it in the preheated oven. Bake for approximately 15-18 minutes per pound, basting with the glaze every 30 minutes.

Finishing Touch

In the last 30 minutes of baking, remove the foil to allow the glaze to caramelize. The ham is done when it reaches an internal temperature of 140°F (60°C).
