Ensure shrimp are peeled and deveined, crab meat is lump, and oysters are shucked. Set seafood aside.

Cooking

In a large pot, heat vegetable oil over medium heat. Gradually whisk in flour, stirring constantly until mixture is a dark brown color, about 15-20 minutes.
