    Rinse the red beans under cold water, then soak them in a large bowl of water for at least 8 hours or overnight.

    Cut the smoked sausage into bite-sized pieces.

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onions, bell pepper, and celery, and sauté for 5-7 minutes until softened.
