Preparation of the Salad Base

Prepare the Vegetables

Wash and dry the mixed greens thoroughly. Slice the cherry tomatoes in half, peel and slice the cucumber into thin rounds, and thinly slice the red onion.

Grilling the Chicken

Marinate the Chicken

In a bowl, mix together 2 tablespoons of olive oil, salt, black pepper, and garlic powder. Coat the chicken breasts in the marinade and let sit for at least 15 minutes.

Grill the Chicken

Preheat your grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 5 minutes before slicing.

Making the Vinaigrette

Combine Vinaigrette Ingredients

In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of Dijon mustard, 1 teaspoon of honey, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper until well combined.

Assembling the Salad

Combine Ingredients

In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Top with sliced grilled chicken.

Dress the Salad

Drizzle the vinaigrette over the salad and toss gently to combine. Serve immediately.
