Fried Oysters

Prepare the Oysters

Shuck the oysters carefully, ensuring to keep them whole. Place them in a bowl and set aside.

Make the Breading

In a shallow dish, combine the flour, cornmeal, salt, and black pepper. In another bowl, whisk together the eggs and milk.

Bread the Oysters

Dip each oyster first into the egg mixture, allowing excess to drip off, then dredge in the flour mixture, ensuring they are fully coated.

Fry the Oysters

Heat the oil in a deep frying pan over medium-high heat. Carefully add the breaded oysters in batches and fry for 2-3 minutes or until golden brown. Remove and drain on paper towels.

Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips.

Soak the Potatoes

Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes

Heat the oil in a deep frying pan over medium-high heat. Drain the potatoes and pat them dry. Fry them in batches for 4-5 minutes or until golden and crispy. Remove and sprinkle with salt.
