Preparation of Crawfish Tails
Start by rinsing the crawfish tails under cold water to remove any debris. Pat them dry with paper towels and set aside.
In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well until all dry ingredients are evenly incorporated.
Pour the buttermilk into a separate bowl. Dip each crawfish tail into the buttermilk, allowing any excess to drip off, before coating it in the flour mixture. Make sure each tail is thoroughly coated.
Frying
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the flour mixture into it; if it sizzles immediately, it’s ready.
Carefully place the coated crawfish tails into the hot oil, a few at a time, to avoid overcrowding. Fry them for about 3-4 minutes or until they are golden brown and crispy.
Using a slotted spoon, remove the fried crawfish tails from the oil and place them on a plate lined with paper towels to drain any excess oil.
Serving
Slice the French bread into thick pieces. Serve the fried crawfish tails hot with slices of French bread on the side for dipping or enjoying together.
