Fried Catfish

Prepare the Catfish
In a bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Mix the Coating
In a shallow dish, combine cornmeal, flour, cayenne pepper, salt, and black pepper. Mix well.

Coat the Fish
Remove catfish fillets from buttermilk and let the excess drip off. Dredge the fillets in the cornmeal mixture, ensuring they are fully coated.

Fry the Catfish
In a large skillet or deep fryer, heat oil over medium-high heat. Once hot, carefully add the coated catfish fillets and fry for about 5-7 minutes per side or until golden brown. Remove and drain on paper towels.

Prepare the Potatoes
Peel and cut the potatoes into thin strips or wedges, rinsing them under cold water to remove excess starch.

In a large skillet or deep fryer, heat oil over medium-high heat. Add the potato strips in batches, frying for 4-5 minutes or until golden and crispy. Remove and drain on paper towels, then sprinkle with salt.

Shred the green cabbage and carrots. Place them in a large mixing bowl.

In a separate bowl, mix together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.

Pour the dressing over the shredded vegetables and toss until everything is evenly coated. Refrigerate for at least 15 minutes before serving.
