    Prepare the Batter

    In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Mix well. Gradually whisk in cold sparkling water until the batter is smooth and slightly thick.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use enough oil to submerge the fish completely.

    Fry the Fish

    Dip each fish fillet into the batter, allowing the excess to drip off. Carefully place the battered fish in the hot oil, frying in batches to avoid overcrowding. Fry for 4-5 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

    Prepare the Potatoes

    Peel the potatoes and cut them into thick strips. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Fry the Fries

    In a separate pot or fryer, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches for about 5-7 minutes until they are golden and crispy. Remove from the oil and drain on paper towels. Season with salt to taste.

Tartar Sauce

    Mix the Sauce

    In a small bowl, combine the mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Mix well until all ingredients are fully incorporated. Refrigerate until ready to serve.
