Method

Preparation

  1. 1

    Prepare the Ingredients

Wash the live crabs under cold water to remove any dirt or debris. Cut the potatoes into halves or quarters depending on their size. Shuck the corn and cut it into halves if desired. Slice the Andouille sausage into pieces.

  2. 2

    Prepare the Spices

In a large bowl, combine the Old Bay seasoning, salt, and bay leaves. Squeeze the juice of one lemon into the mixture and set aside.

Cooking

  1. 3

    Boil Water

In a large pot, fill it with at least 3 gallons of water and bring it to a rolling boil over high heat.

  2. 4

    Add Potatoes and Sausage

Once the water is boiling, add the potatoes and sliced Andouille sausage. Cook for about 10-12 minutes until the potatoes are tender.

  3. 5

    Add Corn

Add the corn on the cob to the pot and cook for an additional 5 minutes.

  4. 6

    Add Crabs

Carefully add the cleaned live crabs to the pot. Cover and cook for 10-15 minutes, or until the crabs turn bright red and are fully cooked.

  5. 7

    Final Seasoning

As the crabs cook, add the remaining lemon juice and garlic cloves to the pot for added flavor.

Serving

  1. 8

    Drain and Serve

Once cooked, remove the pot from heat and carefully drain the water. Spread the crab boil mixture onto a large serving platter or table lined with newspaper. Serve with melted butter and hot sauce on the side.
