    Prepare the Meat Mixture

    In a large bowl, combine the ground pork shoulder and pork fat. Add the minced garlic, salt, black pepper, marjoram, coriander, and smoked paprika. Mix well until all ingredients are evenly distributed.

    Gradually add the ice water to the meat mixture, stirring continuously until the mixture is well combined and has a slightly sticky consistency.

    Prepare the Casings

    Rinse the hog casings in cold water and soak them in lukewarm water for about 30 minutes. This will make them pliable for stuffing.

    Stuff the Sausages

    Using a sausage stuffer, carefully fill the casings with the meat mixture, being careful not to overstuff. Twist sausages into desired lengths and tie off the ends securely.

    Cook the Sausages

    You can either smoke or boil the sausages. For smoking, preheat your smoker to 200°F (93°C) and smoke for about 2–3 hours until the internal temperature reaches 160°F (71°C). For boiling, bring a pot of water to a boil and cook sausages for about 30 minutes.

    Let the sausages cool slightly before slicing. Serve them warm or refrigerate for later use.
