    In a large bowl, mash the boiled potatoes until smooth. Add the Chapel Hill Creamery Calvander cheese, chopped green onions, salt, and black pepper. Mix until well combined.

    Form the Croquettes

    Take a small portion of the potato mixture and shape it into a small oval or round croquette. Repeat until all the mixture is used.

    Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

    Bread the Croquettes

    Dredge each croquette in flour, dip in beaten eggs, and coat with breadcrumbs. Ensure they are fully covered.

    In a large skillet, heat oil over medium heat. Fry the croquettes in batches until golden brown on all sides, about 3-4 minutes per side. Drain on paper towels.
