    Prepare the Steak

    Season the Angus flat iron steak with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side until browned and cooked to your desired doneness. Let it rest for 5 minutes before slicing.

    Braised Baby Limas

    In a pot, sauté the diced onion and minced garlic in olive oil until translucent. Add the baby limas, vegetable broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-40 minutes until the beans are tender. Season with salt and black pepper to taste.

    Swiss Chard

    In a skillet, heat olive oil and sauté minced garlic until fragrant. Add the chopped Swiss chard and cook until wilted, about 5-7 minutes. Season with salt and black pepper to taste.

    Hay-Roasted Bordelaise

    In a saucepan, combine red wine, beef stock, diced shallots, thyme, and bay leaf. Simmer until reduced by half, about 20-25 minutes. Strain the sauce and season with salt and black pepper to taste.

    Serve

    Slice the rested steak and serve it on a plate with braised baby limas and sautéed Swiss chard. Drizzle the hay-roasted Bordelaise sauce over the steak.
